To claim that it’s hot would be a supreme understatement. It was 108°F at my house this afternoon so ice cream was definitely on the brain. This is one I made last weekend and it went over very well with the family. The price of cherries has finally come down and I’ve been buying a lot of them lately. When the end of the month draws near it means the time has come for another Daring Bakers challenge. The June Daring Bakers’ challenge was hosted by Jasmine of Confessions of a Cardamom Addict and Annemarie of Ambrosia and Nectar. They chose a Traditional (UK) Bakewell Tart… er… pudding that was inspired by a rich baking history dating back to the 1800’s in England. This challenge was different… in part because I’d never ever heard of a Bakewell Tart or Bakewell Pudding. But it sounded interesting and rather tasty so I thought I’d give it a go. Considering I completely lost track of days and didn’t realize until today that the reveal date was… uhm… today… it was a really good thing this recipe could be completed quickly. “Quickly” as in about 2hrs start to finish. Oh yeah, I’m definitely thanking Jasmine and Annemarie for that!!

Check the archives and you’ll find a few recipes I’ve shared. I can’t say that I’m a fan of honey but I do like peaches so I figured I’d give this one a whirl… plus… I’m always looking for a good excuse to pull out my KitchenAid Ice Cream Maker attachment!

Without a doubt this has to be the quickest and easiest of Dorie’s recipes in “Baking From My Home To Yours”. Unfortunately I found myself scrambling quite late on Monday night without a single apple in the house. Luckily I had some leftover sliced apples from another recipe and was still able to make my version of this dessert just in time!!!
