Roasted Roma Tomatoes

As any foodie knows, you come across far more appealing recipes than you can realistically make.  Sure everyone has their own personal “To Do” list but on top of that, cooks/bakers have their “Must Make” list.  Put the two together and it can feel like a double-whammy comin’ atcha sometimes! LOL!  I found this recipe while perusing my usual round-up of must-read blogs (thank heavens for feed-readers!) and it quickly moved up to the top of the “Must Make” list.  I’m glad it did because this is one delicious light-snack / appetizer that’s fun to share… uhm… if you can ;)

Pasta w Sundried Tomatoes

The Independence Day holiday weekend is officially over… and most people are back to their usual summer routine. I’m busier than usual taking the fondant cake course on top of my usual day job (which seriously gets in the way of me having a real life!).  I was very glad to not have to think about dinner last night and rely on Ina Garten instead.  The first Barefoot Bloggers recipe for July was chosen by Cat of the blog Delta Whiskey. Her choice was Ina’s recipe for Pasta with Sundried Tomatoes.    Really it’s more of a pasta salad since it’s served cold but it came together quickly and easily… something for which I was very grateful indeed!

Flour Tortillas

Just in time for tomorrow’s Cinco de Mayo celebrations I thought I’d share a few ideas you might like to try for yourself. Anyone can open a bag of chips, pour out a bowl of salsa and whip up a margarita but I’ll show you that it’s really not difficult to make homemade flour tortillas… taco salad in a baked tortilla bowl… a super quick version of chilaquiles and a crispy cinnamon-sugary treat. Okay sure, they’re not 100% authentic but they are 100% fun. And after a few margaritas (virgin or loaded!) the fun is more important anyway… OLE!

Croque Monsieur

I’m really enjoying being a part of the Barefoot Bloggers. The Chinese Chicken Salad we made two weeks ago was a definite winner and the leftover dressing made a very tasty baking sauce for another dish I made this past weekend. This week’s recipe selection was a Croque Monsieur sandwich… something I can honestly say I never in a million years would’ve made on my own. In the spirit of the MasterCard commercials, let me break it down for you…

Gruyere Cheese… $9.49
Parmesan Cheese… $3.79
Black Forest Ham… $6.99
French Bread… $3.49
Honey Dijon Mustard… $3.19

The end result… PRICELESS!!!

Chinese Chicken Salad

This is my first week as a Barefoot Blogger and I have to admit it’s awfully nice. I mean, sure I have a rather singular devotion to the sugar food group but every so often a girl gets a hankerin’ for actual food too :) This week’s selection was chosen by McKenzie of the blog Kenzie’s Kitchen… and what a nice introduction it was to the group. Chicken… asparagus… red peppers… and a tangy asian-style dressing. Definitely a winning combo! (more…)
