I can’t remember a time when I didn’t love strawberry shortcake. Once summertime rolls around I can barely suppress the urge to buy strawberries every time I hit the market. There’s so many ways to make shortcake and it’s such a quick and easy dessert that you can throw it together in no time at all. You can buy pound cake (Sara Lee is my favorite brand) or angel-food cake cups but personally I love to make the cake myself. I know… newsflash huh? Last Christmas my mother came to visit and I whipped up a quick cake recipe, baked it in individual molds, topped them with defrosted sliced strawberries and freshly whipped cream and she proclaimed it to be the best dessert I’d ever made for her! But now that it’s strawberry season there’s no need to use frozen berries… and the result is even better :)
Sunday is Mother’s Day in the US and what a beautiful addition this cake will be to your brunch spread. The lemon flavor is no slouch at all… it definitely takes center stage which makes me a very happy camper. It can be dressed up… or dressed down… frosted, glazed, dusted with powdered sugar, served alone, topped with fresh berries and whipped cream or served with a sauce. This blueberry sauce shown above can be made to suit your (or mom’s) taste and the leftovers can be used on pancakes, french toast, scones or even ice cream. This week’s Tuesday with Dorie recipe was selected by Megan of My Baking Adventures and she chose the Tiramisu Cake. If you’ve read my blog for any length of time you’ll know I steer far clear of anything that smells or tastes like coffee. The mere scent of it does a number on my tummy that’s not unlike the oft-described symptoms of morning sickness. Yup… pretty bad. But tiramisu is one of DH’s all time favorite desserts and he always orders it when we’re out. So when I considered sitting this week out I thought about how wonderful my husband is… and how thrilled he’d be with this dessert… and quite literally completing this week’s recipe became a full on labor of love :)
While I will never drink a cup of coffee… and admit the mere smell of the stuff does a number on my tummy… I absolutely do love coffee cake. Especially when it’s full of brown sugar, cinnamon and has lots of stuff on top. Sit me down with a chunk (as a mere “slice” would never do!) and a glass full of milk and I’m one happy lady! This Cinnamon Streusel Coffee Cake meets all those requirements… and more!
