
You tell me… which do I talk about more… lemons or the weather? Hmmm… I think it just might be a toss up! LOL! While we sadly don’t get the four seasons here, we do get our share of heat (and probably a few other state’s share of heat as well). I don’t know about the weather where you live but here in Southern California we’ve just blown thru Spring and landed smack-dab in the middle of a summer-like heat-wave! Good grief it’s too early in the year to deal with 100°F days and nights so warm you sleep on top of the sheets… with the fans running… but that’s where we’re finding ourselves these past few days. The forecasters are saying we won’t be back down to normal high-70’s until the end of next week so I’ve been thinking about… you guessed it… ice cream! A mound of cool, creamy ice-cream tucked between two incredibly thick and chewy chocolate chip cookies and coated with chocolate sprinkles. Oh most definitely you can beat the heat with this!

This week’s Tuesday with Dorie recipe was selected by Megan of My Baking Adventures and she chose the Tiramisu Cake. If you’ve read my blog for any length of time you’ll know I steer far clear of anything that smells or tastes like coffee. The mere scent of it does a number on my tummy that’s not unlike the oft-described symptoms of morning sickness. Yup… pretty bad. But tiramisu is one of DH’s all time favorite desserts and he always orders it when we’re out. So when I considered sitting this week out I thought about how wonderful my husband is… and how thrilled he’d be with this dessert… and quite literally completing this week’s recipe became a full on labor of love :)

Just in time for tomorrow’s Cinco de Mayo celebrations I thought I’d share a few ideas you might like to try for yourself. Anyone can open a bag of chips, pour out a bowl of salsa and whip up a margarita but I’ll show you that it’s really not difficult to make homemade flour tortillas… taco salad in a baked tortilla bowl… a super quick version of chilaquiles and a crispy cinnamon-sugary treat. Okay sure, they’re not 100% authentic but they are 100% fun. And after a few margaritas (virgin or loaded!) the fun is more important anyway… OLE!

While I will never drink a cup of coffee… and admit the mere smell of the stuff does a number on my tummy… I absolutely do love coffee cake. Especially when it’s full of brown sugar, cinnamon and has lots of stuff on top. Sit me down with a chunk (as a mere “slice” would never do!) and a glass full of milk and I’m one happy lady! This Cinnamon Streusel Coffee Cake meets all those requirements… and more!
