
This week’s Tuesday with Dorie hostess was Kelly of the blog Baking With The Boys and she selected the recipe for Mango Bread. This was quite a fun adventure because while I was peeling the mangoes, my wonderful DH came into the kitchen to see what I was up to. He wasn’t sure if he liked mango so I cut him a slice and he loved it! So much so that he asked if he could help me make the bread. I always have fun when DH cooks with me and this time was no exception. He got so into the process that before we knew it he was pretty much doing it all himself… and I was merely providing direction!
Being unsure of how many mangoes would be needed to yield 2 cups of diced fruit, I bought three just to be on the safe side. This turned out to be a good thing because it took two mangoes… and DH was happy to eat the other one :) This was a good recipe for DH to make because the ingredients are simple and the method is really straightforward. It was nice to watch my husband “The Grillmaster” try his hand at baking. He now knows the scoop-and-sweep technique for measuring flour, what “packed” brown sugar means, how to zest a lime and that there is a difference between baking soda and baking powder.
He did very, very well but one thing absolutely puzzled me. When the bread had baked for one hour we checked it for doneness and for some reason when I told him to “jiggle the pan just a little bit” he interpreted that as “rap that bad boy on the counter”. Of course, that immediately deflated the center of what had been a beautifully crowning loaf. Not quite sure how “jiggle” became “give it a good rap” but hey, in the end it still tasted great and who knows… the center might have sunk anyway without his… uhm… “assistance” LOL!

DH was very proud of himself and has been quite happy eating the fruits of his labors. The only modification “we” made to the recipe was in omitting the raisins since he just wasn’t in a raisin mood :) If you’d like the recipe it can be found on page 45 of Dorie’s book Baking From My Home To Yours (link available in my sidebar) and it should be on Kelly’s blog as well.
