
Today is DH’s birthday and this week’s Tuesdays with Dorie recipe was seemingly chosen with him in mind. Oh sure I could’ve made a traditional birthday cake but then I realized this has both almonds and chocolate… two of his favorites… and though it’s a torte it’s definitely close enough to cake for my DH. Trust me, this chocolatey-almondy dessert made him one very happy birthday boy :)
The recipe calls for Amaretti cookies and since I was unable to find them I decided to make them from scratch using this recipe here (thank you Amanda!). The cookies were easy to make and I would certainly make them again as they came out very very tasty :)

I halved the recipe for the Chocolate Amaretti Torte and made it in two 4″ springform pans. The consistency came out rather “nutty” and I’m sure that is because I did not get the almonds processed finely enough. My fault and next time I will know better.

The glaze was pretty much a standard ganache and I crumbled some of the amaretti cookies over the top for looks. In the final analysis this is a very tasty, rather different, dessert that I do think I will make again. But next time I’ll definitely, DEFINITELY process the almonds until they’re super super fine. This will greatly improve the texture for much more satisfying results.

They look good……….way to hard pm yourself I’m sure. That’s pretty impressive that you made your own amaretti cookies, too! Don’t think I’d have gone that route. I’m a scared, lazy baker when it comes to anything "different"! I would have been like "oh, man no cookies? No torte!" :)

I love your heart cake. I really want to make these cookies. Your recipe looks like it was a winner. I don’t think I got my almonds quite processed enough either. I liked it but agree it was different. Now on the other hand I loved the batter.
