Chocolate Cream Tart – TwD

This week’s Tuesday with Dorie recipe was the Chocolate Cream Tart selected by Kim of Scrumptious Photography.  Once again I couldn’t quite bring myself to do the just standard recipe and instead decided to play around with flavor combinations.  I made a total of three tarts… two 4″ and one 6″. This one above is a 4″ Chocolate Banana Cream tart.  A thin layer of banana flavored cream followed by a thick layer of banana flavored chocolate filling and topped with a layer of banana flavored whipped cream.  DH picked this combo and I used Banana Cream Rum for the flavoring.  It was a total winner in his book!  I had to rush and get photos because he couldn’t wait to taste this… and once he started, well, the nom-nom-nom sounds were not far behind.  He LOVED this!  But remember, I made a total of three tarts.  Sooooooo…. care to see the other two?

The April 2009 challenge is hosted by Jenny from Jenny Bakes. She has chosen Abbey’s Infamous Cheesecake as the challenge. At this point I can’t count the number of times I’ve made cheesecake but I suppose there’s always room for one more recipe ;) This time I enlisted DH and the kids to help me decide on a flavor and we came to a compromise decision. You see, they wanted chocolate (don’t they always want chocolate? LOL) and I wanted citrus… so one of the cheesecakes was orange with a chocolate ganache top. Satisfied us all :) But I also had another type of fruit gazing at me wistfully from the counter…

Em’s Favorite Lemon Ice Cream

In most parts of the country, spring has sprung, the weather is warming up and this means it’s a great time to start thinking about ice cream.  Oh sure, you can go to the market and buy ice cream pretty much any time of year but there’s just something really satisfying about making your own.  Lucky for me, I have the ice-cream maker attachment for my KitchenAid stand mixer… but that’s just one option. Cuisinart makes a few good ones as do Hamilton Beach, Rival and Villa Ware.  You can even search the internet for instructions on making ice cream without a machine at all!  I’ve made ice cream more times than I can count.  DH loves coffee ice cream… DS loves mint chocolate chip ice cream… DD loves bubble gum ice cream… and me?  Well, heck, that’s an absolute no brainer cuz if you know me as well as I think you do, you know I love LEMON ice cream :) :) :)

Croque Monsieur

I’m really enjoying being a part of the Barefoot Bloggers. The Chinese Chicken Salad we made two weeks ago was a definite winner and the leftover dressing made a very tasty baking sauce for another dish I made this past weekend. This week’s recipe selection was a Croque Monsieur sandwich… something I can honestly say I never in a million years would’ve made on my own. In the spirit of the MasterCard commercials, let me break it down for you…

Gruyere Cheese… $9.49
Parmesan Cheese… $3.79
Black Forest Ham… $6.99
French Bread… $3.49
Honey Dijon Mustard… $3.19

The end result… PRICELESS!!!

Key Lime Toasted Coconut Cupcakes

I’ve been on quite the citrus kick lately – and these key lime toasted coconut cupcakes definitely continue the trend. No real surprise I wanted something light and refreshing since the temperatures topped out at 95° F this afternoon. Waaaaaay too early in the year for this but the forecast calls for about a 30° drop by next weekend so I think I can manage. Key limes… coconut… light… refreshing… it all comes together to make me want a tropical vacation!
