Em’s Favorite Pound Cake

There are certain must-have recipes in the old “go-to” box. For me, these include a decadent chocolate cake… the best buttercream frosting… an unbeatable lemon tart… the perfect pie crust… and the classic pound cake. I’ve tried probably close to a dozen different pound cake recipes – some were good… some were decent… and some were utterly disastrous. But not this one. This pound cake stands head -&- shoulders above the rest as the quintessential dress-me-up-or-dress-me-down dessert. M’mmmn… just look at that gorgeous crumb… makes ya wanna grab that slice right thru the screen and start making nom-nom-nom noises of your very own, doesn’t it. Uh…. yup… I knew it ;)

Sugar Cookie Bars

There are times when I can be incredibly lazy. I admit it. I’m not proud of it, mind you, but I’m aware of it and working to change it. But there are also times when my being lazy works out quite well :) Case in point, I love sugar cookies but would rather not spend the time and energy rolling out the dough, cutting out the shapes, waiting for them to cool, making the icing and then decorating them. That takes waaaaaaay too long and it’s waaaaaaay to easy for me to give up and eat them long before the decorating even starts! LOL. So when I came across the recipe for sugar cookie bars, well, it was like a timely solution to my old nemesis… laziness :)

Pineapple Gooey Butter Cake

You’re probably familiar with Gooey Butter Cake – I think Paula Deen had quite a bit to do with making it so widely known. Lately it’s been all the rage on one of the food-related sites that I frequent and I felt completely like an outsider having never tried it. That was easily remedied since I could find several recipes and make it myself :) Not to be satisfied with the regular version, I added some fruit and turned a classic into something extra special!!

Goat Cheese -&- Marinara

Don’t worry – what you’re looking at is the “before” shot. When all is said and done, it looks only vaguely like this :) There’s a restaurant in our area that serves the most incredible goat cheese -& marinara appetizer. Prior to today, it was the only one I’d ever tried so I really had nothing to compare it to but rest assured it’s good! The 4th Thursday night of every odd-numbered month we have our Home Owners Association (HOA) meeting and since I’m on the board of directors, I’m kind of expected to show up ;) One thing that motivates me is knowing that when the meeting is over, a few of us head out for a drink. The restaurant they always choose is the one with the goat cheese -&- marinara appetizer… which motivates me even more!

Dark Rye Bread

If it’s one thing I love… it’s bread! I tried doing the Atkins diet almost a decade ago and what I missed the absolute most was bread. French bread, wheat bread, sourdough bread, foccacia, brioche, whole-clove garlic bread, no-knead bread… and especially dark rye bread. M’mmmm. What’s the best part about going to Outback, Lonestar or a good steak house? It’s the bread! Come on – I know ya feel me on this one! LOL! There’s something about a loaf of good, hearty, warm, satisfying bread…. and oh, it’s even better when you bake it at home yourself
